Yesterday was THE yummiest.
I started off with my usual smoothie of dreams, including 1 cup frozen blueberries, 1 cup frozen spinach, 1 tbsp hemp seeds, 1 tbsp raw cacao powder, 1 medjool date, about 1 1/2 cups unsweetened vanilla almond milk, a splash of vanilla extract, a scoop of brown rice protein, and a few drops of stevia.
Perfection in a glass, people!
By the way, lately I’ve been making little pre-prepped smoothie bags with the blueberries, spinach, hemp seeds, cacao, and protein that I throw in the freezer the night before. Then at 5:45am when I don’t feel like making food, I just toss the pack in my lunchbox. When 8am rolls around and my stomach is grumbling at Alchemy, I dump the bag in the blender with the date, almond milk, vanilla extract, and stevia. I make around four bags at a time and I’ve been loving having them ready to go!
I had an Alchemy meeting at Stauf’s so I sipped on a half-caff iced coffee and snacked on a delish brown rice krispie treat test recipe made with puffed quinoa and spirulina. I know it looks like the Loch Ness monster, but trust me…it tasted more than dreamy. Keep an eye out for them soon!
Lunch part one was a Smart Fit salad from Cosi with romaine, kale, corn, roasted sweet potatoes avocado, carrots, and a chipotle honey like dressing plus carrots on the side. It was okay, but nothing to write home about.
Lunch part two was curried chickpea salad with extra kale and bell peppers over mixed greens. It never gets old!
Snackage included a juicy nectarine. Summer’s fruit at its finest!
Post-workout dinner fuel starred a roasted tomato and green onion wild salmon burger that my mom had given me when I was home in Cleveland over the weekend. Score! I paired it with roasted asparagus, baby potatoes, and roasted brussels that I had prepped in the fridge. I dipped everything in my favorite Oasis roasted garlic hummus with hot sauce, obviously.
After dinner I chowed down on a fudgey black bean zucchini cookie (stay tuned for the recipe tomorrow) and some fresh bloobs and straws on the side.
