I’m currently out of commission with some weird little bug that came on yesterday when I was at work completely out of nowhere. So basically I’ve been laying around bored in ten layers of clothes thinking of what I should blog about.
I have a yummy recipe for sweet potato quinoa bean burgers to share with you all, but I thought I’d hold off and give you a peek into the lunches I pack every day for work. I know from experience that looking at some one else’s lunch can give you lots of fabulous ideas!
Some people say they don’t have time, but even if I’ve worked all day, babysat, and came home to loads of school work, I always always always pack a lunch. Not only does it ensure that I’ll have a healthy meal that I control, but it also saves me tons of money (I’m trying to eat out as little as possible). Plus, once you’re in a routine, you become so used to it that it really isn’t a huge deal. We all feel lazy sometimes, so there’s no shame in packing an Amy’s burrito or PB&J. Happens to the best of us!
Remember, being healthy is all about being prepared. You must be able to rely on yourself.
First up, kale salad with extra quinoa and a pear.
Salmon, quinoa, spinach and hummus with an apple and almonds.
Almond butter and jelly sandwich, carrots and hummus and a pear.
Beans and rice, hummus and broccoli, trail mix and a pear.
And when it’s the weekend and you’re too lazy to whip up something in the kitchen…there’s always the big burrito at Northstar.
