It’s been a bit too long since we last delved into my lunchbox.
If you follow me on instagram, you probs know that Larabars have been a daily addition for snacktime this week since I got this CRAZY deal on them at Kroger. The flavors with chocolate chips are my fave, obviously.
I always say that being healthy is all about being prepared. Packing a lunch is a big part of being prepared, since it means you don’t have to go spend money on food that’s being prepared with God only knows how much added salt, sugar, fat, etc. That doesn’t mean I never eat out. Y’all know about my love affair with Northstar. It’s all about balance!
I often get asked if I count calories. The answer is no. I don’t currently count calories, nor have I ever counted calories. I focus on eating primarily whole foods with lots of healthy fats (nuts, almond butter, avocado), protein (beans, lentils, tofu, tempeh, eggs, fish) and complex carbs (oats, quinoa, brown rice, whole-grain bread/pasta, fruits and veggies). I focus more on the quality of calories I take in rather than the quantity. That has always worked best for me.
That’s not to say that not counting calories is for everyone. It may be super helpful for some people to keep track of what they’re comsuming; and research shows that tracking what you eat is actually quite benficial for weight loss since you become so much more aware of what you consume.
Now back to the eats!

I got off in time to eat lunch at home, so I had scrambled eggs with spinach and avocado, strawberries and toast with hummus.
Packing a lunch is so underrated.
