Yesterday was one of those days where I had to stay all day and night at Alchemy. No complaints, but when I got home I wanted to dive into a pile of carbohydrates, prop my feet up, and not come within ten feet of my computer.
So today I decided to switch up WIAW and re-post a day of eats from nearly a year ago. It was so funny looking back at how much things have changed at Alchemy. I used to prep all of the our salads in the morning and now we have full time prep help to do it! Looks like the smoothie obsession was as strong then as it is now…
There’s no taming this hunger beast!!
For breakfast I decided to switch it up from my usual make-ahead steel-cut oatmeal routine. I whipped up a smoothie at Alchemy with frozen blueberries, hemp seeds, chia seeds, spinach, cacao powder, and Skoop protein powder for staying power. I also had some coffee with a splash of vanilla soy milk.
Mid-morning, I snacked on my favorite baked good as of late—a couple cute little vegan chocolate banana muffins! Have you guys made these yet?! I’m obsessed.
I didn’t have tons of time to sit down for lunch (I pretty much never sit down at Alchemy), but I did scarf down a hugh jass bowl of this delicious 10-spice vegetable soup. If this soup looks familiar, that’s because I’ve been eating it for over a week. Oopsies!

Snacks included an unpictured random pickle, an apple with almond butter…
…and some oatmeal with blackberries and almond butter. My appetite was in full swing today in case you couldn’t tell!
Before Body Pump, I snacked on a few whole grain crackers with hummus and hot sauce.
Dinner was the rest of these delish crispy tofu fingers (recipe coming soon!), a big sweet potato all sliced up and roasted, and a mound of roasted zucchini.
Before bed I snacked on handfuls and handfuls and more handfuls of popcorn…
….followed by a no-bake peanut butter granola bar from the freezer.
